Last night was one of those nights where I realized (again) how hardcore of a baker I am…the first time was when I set dough outside on the back patio because I knew the hot and humid weather outside would give it a good rise…
Yesterday, I had it in my mind that I was going to make some sweet bread. It was in the day’s plan. I had planned to make it during the evening, when big N was gone for karate. I totally didn’t even think that the whole process was going to take upwards of 3 hours! So, I ended up starting the whole mixing and kneading process at around 8:15pm and when I finished it was already 8:30pm. I wanted the bread to have a good first rise (not to be sacrificed unless direly necessary), so I gave it until 10:30pm. Then I rolled out the dough and put the filling in. Well, after forming the dough, I let it rise for the second time, until 11:15pm and by the time the bread was done baking, etc. etc, it was already 12:15am! I went to bed thinking to my self, “I’m crazy…” and smiling because the bread turned out beautifully. It was worth it.
This morning we had a few slices of Cinnamon Swirl Raisin bread for breakfast and it was delightful!

Instead of putting cinnamon into the dough, I opted to make the bread a swirl bread, so I rolled out the dough and used the filling from this recipe, which has cinnamon in it. I was worried that the bread dough (which was sweet) would be too sweet when combined with the filling (which also has sugar in it), but it was great! Not too sweet. It was perfect. Put a little bit of butter on a slice, eat it with some espresso and you’re set!
