So, being the frugal person I am, I wanted to use up all the soy bean mash I had left from making soy milk.  That resulted in a batch of dinner rolls and a loaf of monkey bread.  Yay for healthy recipes that allow you to recycle!

Monkey Bread

Soybean Bread Recipe
450 g.flour
175 g. soybean mash
2 eggs (take 1/2 yolk of one egg if you want a glaze for your loaf/rolls)
15 mL yeast
40 g. vegetable oil
75 g. hot soy milk
2 g. salt

Combine all ingredients and knead until smooth and elastic (about 10 minutes in a stand mixer).  Allow to rise for 90 minutes, or until double original size.  Preheat oven to 350 F.  Gently deflate and form (loaf, rolls, etc.) and allow to rise again for 30 minutes or until almost double original size.  Brush with egg yolk if desired.  Bake for 15-25 minutes, or until toothpick comes out clean.
